Rajasthan’s ancient drink, Rabri, is known for its great health benefits in winter. It provides relief from cold and stomach-related health issues. Made from millet flour, this drink helps alleviate severe cold symptoms and keeps the body warm. In rural areas, it is even considered a tonic for cough and cold.
Rabri, traditionally prepared from buttermilk and millet/wheat flour, has become a popular hot beverage in the winter season and is now even sold in shops. Kuldeep Prajapati, a Rabri vendor, said that the rising cost of ingredients has led to the drink being sold in the market.
To prepare Rabri, the major ingredients required are millet flour, salt, buttermilk, and onion. “Although millet flour is ideal for making Rabri, people also make it using jowar or wheat flour,” the vendor said.
To prepare this drink, add bajra flour and other ingredients with buttermilk in a handi (a small earthen pot), mix it and cook it well on low heat. One can also add a few grains of bajra and gram lentils. After cooking it for a long time on low heat, it is taken off the fire and kept aside overnight. In the morning, one can enjoy the healthy drink.
Ayurvedic doctor Narendra Kumar said that Rabri not only keeps the stomach warm in winter but also helps maintain strength. “In the true sense, it is the nectar of winter and should be consumed to stay healthy and combat winter,” he added.
