For the second cooking segment I want to show how you can do a cool tasty side for your dinner or indeed for a fake away using up leftovers in the fridge from your dinner the day before!
Ingredients

- 400g baby potatoes
- 20 ml olive oil
- 1 x tsp garlic powder
- Sea salt and black pepper
- 50g mayonnaise
- 1 x red chilli diced
- Juice of 1 x lime
- 1 x tsp ginger puree
- Chopped coriander
- 1 x tsp sesame oil
- 30g feta cheese
- 4 x tsp toasted sesame seeds
Method
- Preheat your air fryer to 200 degrees Celsius.
- In a bowl mix your potatoes, oil, salt and pepper & garlic powder.
- With a wooden spoon mix roughly so the spuds burst slightly.
- Cook for 20 minutes shaking the basket ½ way through.
- Heat a dry pan and add in your sesame seeds, do not leave unattended as these will burn and will be ready in 30 seconds, move the pan continuously.
- In a bowl mix your mayonnaise, chilli, lime, sesame oil and ginger.
- Serve with a lime wedge and toasted seeds on the top.
